Ingredients
For the Brownie Layers:
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 tsp salt
For the Cookie Dough Layer:
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp vanilla extract
- 1–2 tbsp milk (optional, for consistency)
Optional Ganache:
- 1 cup heavy cream
- 8 oz chopped chocolate
Instructions
- Prepare the Brownie Layers:
- Preheat oven to 350°F (175°C). Grease and line two round cake pans.
- In a large bowl, whisk melted butter and granulated sugar. Add eggs and vanilla, mixing until smooth.
- Sift in cocoa powder, flour, and salt. Mix until combined.
- Divide batter between pans and bake for 25-30 minutes. Cool completely.
- Make the Cookie Dough Layer:
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add flour and vanilla extract, mixing until smooth. Adjust consistency with milk if needed.
- Assemble the Cake:
- Place one brownie layer on a serving plate. Spread cookie dough over it. Top with the second brownie layer.
- Optional Chocolate Ganache:
- Heat heavy cream until steaming. Pour over chopped chocolate, let sit for 5 minutes, then stir until smooth. Pour over assembled cake.
- Chill:
- Refrigerate for 1-2 hours before slicing and serving.
