Ingredients

For the Brownie Layers:

  • 2 cups granulated sugar
  • 4 large eggs

  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt

For the Cookie Dough Layer:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, for consistency)

Optional Ganache:

  • 1 cup heavy cream
  • 8 oz chopped chocolate

Instructions

  1. Prepare the Brownie Layers:
    • Preheat oven to 350°F (175°C). Grease and line two round cake pans.
    • In a large bowl, whisk melted butter and granulated sugar. Add eggs and vanilla, mixing until smooth.
    • Sift in cocoa powder, flour, and salt. Mix until combined.
    • Divide batter between pans and bake for 25-30 minutes. Cool completely.
  2. Make the Cookie Dough Layer:
    • Cream butter, brown sugar, and granulated sugar until light and fluffy.
    • Add flour and vanilla extract, mixing until smooth. Adjust consistency with milk if needed.
  3. Assemble the Cake:
    • Place one brownie layer on a serving plate. Spread cookie dough over it. Top with the second brownie layer.
  4. Optional Chocolate Ganache:
    • Heat heavy cream until steaming. Pour over chopped chocolate, let sit for 5 minutes, then stir until smooth. Pour over assembled cake.
  5. Chill:
    • Refrigerate for 1-2 hours before slicing and serving.
