Description

A delightful blend of savory flavors, this classic spinach quiche combines tender spinach, aromatic onions, and creamy cheeses within a flaky pastry crust. Perfect for breakfast, brunch, or a light dinner, this dish is both versatile and satisfying.

Ingredients

  • 1 refrigerated pie crust
  • 1 tbsp butter
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 5 oz fresh spinach (or 1 cup frozen, thawed and drained)
  • ½ cup crumbled feta cheese
  • 1 cup shredded Cheddar cheese, divided
  • 4 large eggs
  • 1 cup milk
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

Instructions

  • Preheat Oven: Set oven to 375°F (190°C).
  • Prepare Crust: Place the pie crust in a 9-inch pie plate, crimping edges as desired.
  • Sauté Vegetables: In a skillet, melt butter over medium heat. Add onion and cook until translucent. Stir in garlic and spinach; cook until spinach is wilted.
  • Assemble Filling: In a bowl, combine sautéed vegetables, feta cheese, and half the Cheddar cheese. Season with salt and pepper, then transfer to the prepared pie crust.
  • Add Egg Mixture: Whisk together eggs and milk. Pour over the spinach mixture in the pie crust.
  • Bake: Place in the preheated oven and bake for 15 minutes. Sprinkle remaining Cheddar cheese on top and continue baking for 35 minutes, or until the center is set.
  • Cool & Serve: Let the quiche cool for a few minutes before slicing and serving.

Notes

  • Cheese Swap: Use Gruyère, Swiss, or mozzarella instead of feta and Cheddar.
  • Extra Veggies: Mix in mushrooms, bell peppers, or zucchini.
  • Crustless Option: Skip the pie crust and bake in a greased pie dish for a low-carb version.
