Ingredients

Instructions

  • Prepare the Cake:
    • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • Beat the softened butter and sugar in a large bowl until light and fluffy.
    • Add eggs one at a time, ensuring each is fully incorporated.
    • Alternate adding the dry ingredients with the milk, starting and ending with the dry mixture. Stir in vanilla extract.
    • Divide batter evenly between the prepared pans and bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Caramel Icing:
    • In a medium saucepan, melt butter and stir in brown sugar over medium heat. Bring to a boil, stirring constantly, and cook for 2 minutes.
    • Slowly stir in milk and bring the mixture back to a boil. Remove from heat and cool slightly.
    • Gradually whisk in sifted powdered sugar and vanilla extract until smooth and thick.
  • Assemble the Cake:
    • Place one cake layer on a serving plate and spread a generous amount of caramel icing on top.
    • Add the second cake layer and frost the top and sides with the remaining icing. Work quickly as the icing sets fast.
