Ingredients
For the Cake:
- 3 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup whole milk
- 1 tsp vanilla extract
For the Caramel Icing:
- 1 cup unsalted butter
- 2 cups light brown sugar, packed
- ½ cup whole milk
- 4 cups powdered sugar, sifted
- 1 tsp vanilla extract
Instructions
- Prepare the Cake:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Beat the softened butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, ensuring each is fully incorporated.
- Alternate adding the dry ingredients with the milk, starting and ending with the dry mixture. Stir in vanilla extract.
- Divide batter evenly between the prepared pans and bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Caramel Icing:
- In a medium saucepan, melt butter and stir in brown sugar over medium heat. Bring to a boil, stirring constantly, and cook for 2 minutes.
- Slowly stir in milk and bring the mixture back to a boil. Remove from heat and cool slightly.
- Gradually whisk in sifted powdered sugar and vanilla extract until smooth and thick.
- Assemble the Cake:
- Place one cake layer on a serving plate and spread a generous amount of caramel icing on top.
- Add the second cake layer and frost the top and sides with the remaining icing. Work quickly as the icing sets fast.
Notes
- For a salted caramel twist, add a pinch of sea salt to the icing.
- Sift powdered sugar for smooth, lump-free icing.
- If icing is too thick, add milk in small increments to adjust consistency.
- Store at room temperature for up to 3 days or refrigerate for up to a week.
