Ingredients
For the Donuts:
- 2 cups all-purpose flour
- 1 tsp baking powder

- 3 tbsp unsalted butter, melted
Instructions
- Preheat the Oven: Preheat to 350°F (175°C). Grease a donut pan or line with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
- Cream Butter and Sugar: In a large bowl, beat softened butter and sugar until light and fluffy.
- Mix Wet Ingredients: Add eggs one at a time, followed by vanilla extract. Stir in buttermilk until smooth.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Make Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Cook Peach Topping: In a saucepan, cook diced peaches, brown sugar, cinnamon, and cornstarch (if using) until thickened (about 5 minutes). Cool.
- Prepare Crumb Topping: Mix flour, brown sugar, cinnamon, and melted butter until crumbly.
- Assemble Donuts: Fill each donut cavity halfway with batter. Add a spoonful of cheesecake filling and peach topping. Cover with more batter and sprinkle the crumb topping generously.
- Bake: Bake for 15–18 minutes or until golden and a toothpick inserted comes out clean.
- Cool: Allow donuts to cool for 5 minutes in the pan, then transfer to a wire rack.
