Ingredients

For the Donuts:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For the Peach Cobbler Topping:

  • 1 ½ cups diced peaches (fresh or canned)
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp cornstarch (optional)

For the Crumb Topping:

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 3 tbsp unsalted butter, melted

Instructions

  • Preheat the Oven: Preheat to 350°F (175°C). Grease a donut pan or line with parchment paper.
  • Prepare Dry Ingredients: In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  • Cream Butter and Sugar: In a large bowl, beat softened butter and sugar until light and fluffy.
  • Mix Wet Ingredients: Add eggs one at a time, followed by vanilla extract. Stir in buttermilk until smooth.
  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Make Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  • Cook Peach Topping: In a saucepan, cook diced peaches, brown sugar, cinnamon, and cornstarch (if using) until thickened (about 5 minutes). Cool.
  • Prepare Crumb Topping: Mix flour, brown sugar, cinnamon, and melted butter until crumbly.
  • Assemble Donuts: Fill each donut cavity halfway with batter. Add a spoonful of cheesecake filling and peach topping. Cover with more batter and sprinkle the crumb topping generously.
  • Bake: Bake for 15–18 minutes or until golden and a toothpick inserted comes out clean.
  • Cool: Allow donuts to cool for 5 minutes in the pan, then transfer to a wire rack.

Notes

  • Substitute canned peaches with fresh or frozen, depending on availability.
  • Replace buttermilk with a homemade substitute (milk + lemon juice or vinegar).
  • For a gluten-free version, use a 1:1 gluten-free flour blend.
