Ingredients
- 14 hard-cooked eggs
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon black pepper
- 1/3 cup crumbled cooked beef
- 1/4 cup finely shredded sharp cheddar cheese
- 2 tablespoons chopped fresh chives or scallion tops
Instructions
- Slice eggs lengthwise and remove yolks. Place yolks in a bowl and reserve 24 egg white halves. Chop the remaining 4 halves finely.
- Mash yolks with a fork. Stir in mayonnaise, sour cream, Dijon mustard, lemon juice, and black pepper until smooth.
- Fold in chopped egg whites, beef, cheddar, and chives.
- Spoon the yolk mixture into the egg white halves. Garnish with extra chives, if desired.
- Serve immediately or refrigerate until ready to serve.
