Ingredients
For the Dough:

Instructions
- Prepare the Dough:
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time and mix in vanilla.
- In a separate bowl, combine flour, baking powder, and salt, then gradually add to wet ingredients.
- Prepare the Cheesecake Filling:
- Beat cream cheese, sugar, and vanilla until smooth.
- Transfer to a piping bag.
- Shape the Cookies:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll dough into 1-inch balls, flatten into disks, and pipe cheesecake filling into the center.
- Fold edges over filling, seal, and roll into smooth balls.
- Coat the Cookies:
- Mix sugar and cinnamon in a dish.
- Roll dough balls in the mixture until coated.
- Bake:
- Place cookies on the prepared baking sheet, spacing 2 inches apart.
- Bake for 12–15 minutes until edges are golden. Cool before serving.
- Serve:
- Optionally drizzle with caramel sauce before serving.
