Ingredients

For the Dough:

For the Cinnamon Sugar Coating:

  • 1 cup granulated sugar
  • 1 tbsp ground cinnamon

For the Caramel Sauce (Optional):

  • 1 cup caramel sauce

Instructions

  • Prepare the Dough:
    • Cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time and mix in vanilla.
    • In a separate bowl, combine flour, baking powder, and salt, then gradually add to wet ingredients.
  • Prepare the Cheesecake Filling:
    • Beat cream cheese, sugar, and vanilla until smooth.
    • Transfer to a piping bag.
  • Shape the Cookies:
    • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll dough into 1-inch balls, flatten into disks, and pipe cheesecake filling into the center.
    • Fold edges over filling, seal, and roll into smooth balls.
  • Coat the Cookies:
    • Mix sugar and cinnamon in a dish.
    • Roll dough balls in the mixture until coated.
  • Bake:
    • Place cookies on the prepared baking sheet, spacing 2 inches apart.
    • Bake for 12–15 minutes until edges are golden. Cool before serving.
  • Serve:
    • Optionally drizzle with caramel sauce before serving.
