Ingredients
- 4 cups mixed greens (such as spinach, arugula, or spring mix)
- 1/2 cup dried cranberries
- 1/2 cup pecans, toasted
- 1/4 cup crumbled goat cheese
- 1 small red onion, thinly sliced
- 1 apple, thinly sliced (Honeycrisp or Gala works best)
- 1/4 cup balsamic glaze or vinaigrette
- 2 tablespoons olive oil
- 1 tablespoon honey (optional)
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the mixed greens, dried cranberries, toasted pecans, goat cheese, and red onion.
- Arrange the apple slices on top of the salad to add a pop of color and sweetness.
- In a small bowl, whisk together the olive oil, balsamic glaze (or vinaigrette), honey (if using), and a pinch of salt and pepper to make the dressing.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
- Serve immediately and enjoy this festive salad as a side dish or appetizer!
Notes
- To toast pecans, heat them in a dry skillet over medium heat for 3-4 minutes until fragrant, or toast in the oven at 350°F (175°C) for 8-10 minutes, checking frequently.
- If you prefer a sweeter dressing, feel free to add more honey or substitute the balsamic glaze with a sweeter vinaigrette.
- This salad can be made ahead, but for the best texture, add the dressing just before serving.
