Description

Ingredients

  • 1 cup quinoa, soaked overnight, drained, and patted dry
  • 1 cup chocolate chips (dark, semi-sweet, or milk)
  • 1 tablespoon coconut oil

Instructions

  • Prepare the Pan: Line a loaf pan with parchment paper and set aside.
  • Toast the Quinoa: Heat a skillet over medium-high heat. Add the soaked and dried quinoa, stirring constantly, for 2-4 minutes until it pops and releases a nutty aroma. Avoid burning.
  • Melt the Chocolate: Microwave chocolate chips and coconut oil in a microwave-safe bowl in 15-second increments, stirring until smooth.
  • Combine: Stir the toasted quinoa into the melted chocolate until well-coated.
  • Set the Mixture: Spread the chocolate-quinoa mixture evenly into the prepared pan.
  • Freeze: Place the pan in the freezer for 1 hour or until firm.
  • Serve: Slice into bars and enjoy.
