Ingredients
- 1 cup sugar
- 1/2 cup butter (softened)
- 1/4 cup water
- 1 cup semisweet chocolate chips
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 cup milk chocolate chips
- 1/2 cup creamy peanut butter
Instructions
- In a microwave-safe bowl, combine sugar, butter, and water. Microwave in 45-second intervals until the butter is melted.
- Stir in the semisweet chocolate chips until fully melted. If the mixture isn’t melting, microwave for a few extra seconds and stir.
- Add the egg and vanilla extract, then mix in the flour and baking soda.
- Let the batter cool for about 5-10 minutes.
- Fold in the milk chocolate chips.
- Grease or line a muffin tin and fill each cup about 3/4 full with the brownie batter.
- Bake in a preheated oven at 350°F for 14-16 minutes.
- Once baked, remove from the oven and cool for about 5 minutes.
- If the centers don’t cave in, gently press down in the middle to create a small divot.
- Microwave the peanut butter until melted and creamy, then pour about 1 tablespoon into each brownie cup. Optionally, top with extra chocolate chips.
Notes
- You can substitute chunky peanut butter for creamy, though it may affect the texture.
- For a shortcut, swap the homemade brownie batter for a boxed mix.
- These bites can be made in a muffin tin, or you can use a pan and cut them into squares.
- Store leftovers in an airtight container in the fridge for up to 5 days or freeze them for up to 3 months.
