Ingredients
For the Chocolate Crust:

- 1 cup powdered sugar
- 1 ½ cups heavy whipping cream
- 1 ½ tsp peppermint extract
- Green food coloring (optional)
For the Chocolate Ganache Topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream

Instructions
1. Make the Crust
- Preheat the oven to 350°F (175°C).
- Combine chocolate cookie crumbs and melted butter in a bowl.
- Press the mixture into a 9-inch pie pan, covering the bottom and sides evenly.
- Bake for 8-10 minutes. Let cool completely before filling.
2. Prepare the Mint Filling
- Beat cream cheese and powdered sugar until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Add peppermint extract and food coloring (if desired) and mix evenly.
- Spread the filling into the cooled crust. Refrigerate for 2-3 hours.
3. Make the Ganache Topping
- Heat chocolate chips and heavy cream in a microwave-safe bowl in 20-second intervals, stirring until smooth.
- Cool slightly, then pour over the chilled mint filling.
4. Garnish and Serve
- Chill for 30-60 minutes to set the ganache.
- Garnish with whipped cream, chocolate shavings, and fresh mint leaves before serving.

- For a firmer crust, press the mixture firmly into the pan and ensure it’s evenly distributed.
