Ingredients

  • 1 ½ cups heavy whipping cream
  • 1 ½ tsp peppermint extract
  • Green food coloring (optional)

For the Chocolate Ganache Topping:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

  • Whipped cream

  • Fresh mint leaves

Instructions

1. Make the Crust

  1. Preheat the oven to 350°F (175°C).
  2. Combine chocolate cookie crumbs and melted butter in a bowl.
  3. Press the mixture into a 9-inch pie pan, covering the bottom and sides evenly.
  4. Bake for 8-10 minutes. Let cool completely before filling.

2. Prepare the Mint Filling

  1. Beat cream cheese and powdered sugar until smooth.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Fold the whipped cream into the cream cheese mixture.
  4. Add peppermint extract and food coloring (if desired) and mix evenly.
  5. Spread the filling into the cooled crust. Refrigerate for 2-3 hours.

3. Make the Ganache Topping

  1. Heat chocolate chips and heavy cream in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  2. Cool slightly, then pour over the chilled mint filling.

4. Garnish and Serve

  1. Chill for 30-60 minutes to set the ganache.
  2. Garnish with whipped cream, chocolate shavings, and fresh mint leaves before serving.
