  • Dry Ingredients:
    • 1 cup all-purpose flour
    • ¼ cup cocoa powder
    • 1 tsp baking soda
    • ½ tsp kosher salt
    • ½ tsp espresso powder
  • Wet Ingredients:
    • ½ cup olive oil
    • ½ cup brown sugar
    • ½ cup granulated sugar
    • 2 large eggs, at room temperature
    • 1 tsp vanilla extract
    • ½ cup sour cream
    • 1 cup ripe bananas, mashed (about 2 bananas)
  • Mix-ins and Toppings:
    • ½ cup dark chocolate chips
    • ½ cup semi-sweet chocolate chips
    • 1 tbsp all-purpose flour (for dusting chocolate chips)
    • Optional: 2 banana slices and 1 tsp granulated sugar (for topping)

Instructions

  • Preheat Oven: Set to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • Prepare Dry Ingredients: Whisk together flour, cocoa powder, baking soda, salt, and espresso powder in a medium bowl.
  • Mix Wet Ingredients: In a large bowl, mix olive oil, sugars, and eggs until smooth. Stir in vanilla extract, sour cream, and mashed bananas.
  • Combine Mixtures: Gradually fold dry ingredients into the wet mixture until just combined. Avoid over-mixing.
  • Add Chocolate Chips: Toss chocolate chips with 1 tbsp of flour and gently fold into the batter.
  • Pour and Top: Transfer batter to loaf pan. Optional: top with banana slices and extra chocolate chips.
  • Bake: Bake for 45-55 minutes, checking with a toothpick for doneness.
  • Optional Brulee Topping: Sprinkle sugar over banana slices and caramelize with a torch after baking.
  • Cool: Let the bread cool for 20 minutes in the pan, then fully cool on a wire rack before slicing.

Notes

  • Nut Variation: Add ½ cup chopped walnuts or pecans.
  • Spices: Add 1 tsp cinnamon for a warm touch.
  • Dairy-Free Option: Substitute sour cream with dairy-free yogurt.
