Instructions

  • Prepare the Crust:
    • Preheat oven to 325°F (163°C).
    • Mix crushed chocolate graham crackers with melted butter until combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  • Make the Cheesecake Filling:
    • Beat softened cream cheese until smooth. Mix in sugar and vanilla extract.
    • Add eggs one at a time, mixing on low speed. Fold in sour cream.
  • Bake the Cheesecake:
    • Pour filling over crust. Bake for 50-60 minutes until center is set but slightly jiggly.

  • Add the Caramel Layer:
    • Drizzle caramel sauce over the cooled cheesecake, spreading evenly.
  • Make the Chocolate Ganache:
    • Heat heavy cream until simmering. Pour over chopped chocolate; let sit for 2-3 minutes.
    • Stir until smooth and spread over caramel layer.
  • Chill the Cheesecake:
    • Refrigerate for at least 4 hours or overnight.
  • Garnish and Serve:
