Ingredients
- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup chocolate chips
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 1/2 cups milk (dairy or non-dairy)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1/4 cup peanut butter (optional for extra flavor)
Instructions
- Preheat the Oven: Set the oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
- Combine Dry Ingredients: Add the oats, chocolate chips, vanilla extract, cinnamon, salt, and baking powder to the mashed bananas. Stir to combine.
- Whisk Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and maple syrup (or honey).
- Mix Together: Pour the wet ingredients into the dry ingredients and stir until thoroughly combined.
- Fill Muffin Cups: Divide the oatmeal mixture evenly among the 12 muffin cups, filling each cup about three-quarters full.
- Optional Topping: Add extra chocolate chips on top of each oatmeal cup, if desired.
- Bake: Bake for 18-20 minutes or until golden and a toothpick comes out clean from the center.
- Cool and Serve: Allow the oatmeal cups to cool for a few minutes before removing from the muffin tin. Serve warm or store in an airtight container for up to 4 days.
Notes
- For an extra rich flavor, add peanut butter to the mix.
