This easy recipe is ideal for barbecues, weeknight dinners, or special occasions. Its bold flavors and simple preparation make it a must-try for steak lovers.

Ingredients

For the steak:

  • 4 medium-sized steaks (sirloin, ribeye, or flank)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the chimichurri sauce:

  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped (optional)
  • 4 garlic cloves, minced
  • 1 small red chili or 1/2 teaspoon red chili flakes
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Prepare the Chimichurri Sauce:
    • Combine parsley, cilantro, garlic, red chili, olive oil, red wine vinegar, oregano, salt, and pepper in a bowl. Mix thoroughly and set aside to allow flavors to meld.
  • Season the Steak:
    • Rub steaks with olive oil, salt, and pepper. Let rest at room temperature for 10–15 minutes.
  • Grill the Steak:
    • Heat a grill or grill pan to medium-high. Cook steaks for 4–5 minutes per side for medium-rare, adjusting as needed for desired doneness.
  • Rest the Steak:
    • Remove from grill and rest for 5 minutes to retain juices.
  • Serve:
    • Slice steaks against the grain if using flank steak, or serve whole. Top generously with chimichurri sauce.

Notes

  • Adjust chili quantity for desired spice level.
  • Chimichurri can be prepared a day ahead for enhanced flavor.
