Ingredients

For the Chili:

  • 1 lb ground beef

  • 2 tsp chili powder

  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper, to taste

For the Coneys:

  • 8 beef hot dogs
  • 8 hot dog buns
  • 1 cup shredded cheddar cheese
  • Optional toppings: chopped onions, sliced jalapeños, mustard, ketchup

Instructions

  • Prepare the Chili:
    • In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
    • Add onion and garlic; sauté until soft, 3-4 minutes.
    • Stir in tomato sauce, kidney beans, and beef broth.
    • Mix in chili powder, cumin, paprika, oregano, cayenne (optional), salt, and pepper.
    • Reduce heat to low; simmer for 20-30 minutes, stirring occasionally. Adjust seasoning to taste.
  • Cook the Hot Dogs:
    • Preheat grill or stovetop griddle to medium heat.
    • Grill hot dogs for 5-7 minutes, turning for even browning. Alternatively, cook in a skillet over medium heat.
    • Toast buns lightly on grill or in the oven.
  • Assemble the Chili Cheese Coneys:
    • Place each hot dog in a bun.
    • Top with chili and sprinkle with shredded cheddar cheese.
    • Add optional toppings as desired.
