This Chicken Spinach and Mushroom Low Carb Oven Dish is a creamy, cheesy, and hearty dinner that’s perfect for low-carb and keto diets. Packed with tender chicken, fresh spinach, and mushrooms, it’s easy to make and bursting with flavor.
Ingredients
- 1 small bag fresh baby spinach
- 1 dash pepper
- 1 dash Herb and Garlic Seasoning
- 8 oz shredded mozzarella cheese
- 6 thin-sliced chicken breasts
- 1 container green onion cream cheese
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1 large package sliced mushrooms
Instructions
- Preheat oven to 375°F (190°C).
- Arrange chicken breasts in a single layer in a 9×13-inch pan. Top with spinach and mushrooms. Season with pepper and Herb and Garlic Seasoning.
- In a bowl, soften green onion cream cheese. Whisk in olive oil and chicken broth until smooth. Pour over the chicken and vegetables.
- Cover loosely with foil and bake for 20 minutes.
- Remove foil and bake uncovered for another 20–25 minutes.
- Sprinkle mozzarella cheese on top and bake for an additional 10 minutes, or until cheese is golden.
- Let rest for 10 minutes before serving.
Notes
- Substitute green onion cream cheese with regular cream cheese and chopped green onions if needed.
- For extra flavor, add red chili flakes or swap mozzarella with cheddar cheese.
- Use thawed, drained frozen spinach as a substitute for fresh spinach.
