Ingredients

  • 1 to pounds boneless, skinless chicken breast, cubed
  • ¼ cup olive oil
  • 1 small onion, finely chopped
  • 34 garlic cloves, sliced
  • 14.5 ounces canned tomatoes, pureed (unsalted)
  • ½ cup water
  • 1 teaspoon dried oregano
  • ½ teaspoon sugar (adjust to taste)
  • Pinch of crushed red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 1 cup crumbled feta cheese
  • 46 scallions, finely chopped

Instructions

  • Preheat the Broiler: Set the broiler to high.
  • Season the Chicken: Lightly season the chicken cubes with salt and pepper.
  • Sear the Chicken: In an ovenproof skillet over medium-high heat, heat olive oil. Sauté the chicken for 1-2 minutes per side until lightly browned. Transfer to a plate.
  • Sauté Aromatics: Reduce heat to medium-low. In the same skillet, cook onions and garlic for 8-10 minutes until soft and translucent.
  • Prepare the Sauce: Add pureed tomatoes, water, sugar, oregano, red pepper flakes, and black pepper. Stir well, being cautious with salt due to the feta.
  • Combine Chicken and Sauce: Return the chicken to the skillet, ensuring it’s submerged in the sauce.
  • Add Feta: Sprinkle crumbled feta cheese on top.
  • Broil: Bring to a boil, then transfer the skillet to the oven. Broil for 5-8 minutes until the cheese melts and the sauce bubbles.
  • Garnish and Serve: Remove from oven, garnish with scallions, and serve hot with pasta, rice, or crusty bread.
