Instructions

  • Prepare the Meatballs:
    • Combine ground chicken, ricotta cheese, breadcrumbs, egg, Parmesan, garlic, parsley, salt, and pepper in a large bowl. Mix gently to avoid overworking the meat.
    • Shape the mixture into meatballs and place them on a parchment-lined baking sheet.
  • Bake the Meatballs:
    • Preheat the oven to 400°F (200°C).
    • Bake for 18–20 minutes until cooked through and lightly browned.
  • Make the Spinach Alfredo Sauce:
    • Melt butter in a skillet over medium heat and sauté minced garlic until fragrant.
    • Add heavy cream, bring to a simmer, and stir in grated Parmesan until melted and slightly thickened.
    • Mix in chopped spinach and cook until wilted. Season with salt and pepper to taste.
  • Combine and Serve:
    • Add the baked meatballs to the Alfredo sauce, gently tossing to coat.
    • Simmer briefly to blend flavors and serve over pasta, rice, or alongside crusty bread.
