Description

Chicken Marbella is a sophisticated, Mediterranean-inspired dish that perfectly balances sweet and savory flavors. Featuring prunes, olives, capers, and aromatic herbs, this make-ahead recipe is ideal for family dinners or special gatherings.

 


Ingredients

  • 68 chicken thighs and/or drumsticks
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 cup pitted prunes
  • 1/2 cup Spanish green olives
  • 1/4 cup capers with a bit of juice
  • 4 cloves fresh garlic, minced
  • 2 tbsp oregano
  • 3 bay leaves
  • 1/4 cup brown sugar
  • 1/2 cup dry white wine
  • Fresh parsley for garnish

Instructions

  1. Marinate the Chicken
    • In a large bowl, combine olive oil, red wine vinegar, prunes, olives, capers, garlic, oregano, and bay leaves.
    • Add the chicken and coat thoroughly.
    • Cover and refrigerate to marinate overnight (or for at least 2-3 hours).
  2. Preheat the Oven
    • Set oven to 375°F (190°C).
  3. Bake the Chicken
    • Arrange the chicken and marinade in a baking dish.
    • Sprinkle brown sugar on top and pour white wine around the pieces.
    • Bake for 50-60 minutes, basting occasionally.
  4. Serve
    • Transfer chicken to a platter, spooning juices and fruit over the top.
    • Garnish with fresh parsley.
