Ingredients
- 6–8 chicken thighs and/or drumsticks
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 cup pitted prunes
- 1/2 cup Spanish green olives
- 1/4 cup capers with a bit of juice
- 4 cloves fresh garlic, minced
- 2 tbsp oregano
- 3 bay leaves
- 1/4 cup brown sugar
- 1/2 cup dry white wine
- Fresh parsley for garnish
Instructions
- Marinate the Chicken
- In a large bowl, combine olive oil, red wine vinegar, prunes, olives, capers, garlic, oregano, and bay leaves.
- Add the chicken and coat thoroughly.
- Cover and refrigerate to marinate overnight (or for at least 2-3 hours).
- Preheat the Oven
- Set oven to 375°F (190°C).
- Bake the Chicken
- Arrange the chicken and marinade in a baking dish.
- Sprinkle brown sugar on top and pour white wine around the pieces.
- Bake for 50-60 minutes, basting occasionally.
- Serve
- Transfer chicken to a platter, spooning juices and fruit over the top.
- Garnish with fresh parsley.
