Description

This Chicken Broccoli Stuffing Casserole combines tender chicken, steamed broccoli, and a creamy sauce topped with a crunchy stuffing crust. It’s a perfect comfort food for busy weeknights or family dinners.

Ingredients

2 cups cooked chicken, shredded

2 cups broccoli florets, steamed

1 can (10.5 oz) cream of chicken soup

1/2 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 package (6 oz) stuffing mix

1/2 cup chicken broth

1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, steamed broccoli, cream of chicken soup, sour cream, half of the shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until everything is well combined.
  3. In another bowl, stir together the stuffing mix, chicken broth, and melted butter until the stuffing is moistened.
  4. Spread the chicken-broccoli mixture evenly into the prepared baking dish.
  5. Layer the stuffing mixture on top of the chicken and broccoli.
  6. Sprinkle the remaining cheddar cheese over the stuffing layer.
  7. Bake for 30–35 minutes, or until the casserole is hot and bubbly and the top has a golden crust.
  8. Let the casserole sit for 5 minutes before serving.

Notes

For a vegetarian version, swap the chicken for a meat substitute or extra vegetables.

Try different cheeses such as mozzarella or a blend of cheeses for unique flavors.

Add sautéed mushrooms, onions, or bell peppers to the chicken-broccoli mixture for extra flavor.

Add red pepper flakes or diced jalapeño for a spicy version.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

To reheat, cover with foil and bake at 350°F (175°C) for 15–20 minutes or microwave individual portions.

For freezing, wrap the casserole tightly in plastic wrap and foil, and bake directly from frozen, adding extra time to the cooking process.
