Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 cup mushrooms, sliced
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)

Instructions

1️⃣ Prepare the Chicken: Season the chicken breasts with salt and black pepper.
2️⃣ Cook the Chicken: Heat olive oil or butter in a skillet over medium heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
3️⃣ Sauté the Aromatics: In the same skillet, add more oil if needed. Sauté onions and garlic until fragrant.
4️⃣ Cook the Mushrooms: Add mushrooms and cook until tender and browned.
5️⃣ Make the Sauce: Pour in chicken broth, scraping up any browned bits. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Simmer until thickened.
6️⃣ Add Spinach and Chicken: Stir in fresh spinach and let it wilt. Return chicken to the skillet, coating it with the sauce. Simmer for 5 minutes until fully cooked.
