Description

Chewy coffee cookies with a rich coffee flavor and soft texture, complemented by semi-sweet chocolate chips. A perfect treat for coffee lovers.


Ingredients

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

2 teaspoons instant coffee granules

1/2 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is smooth and creamy.
  4. Add the egg, instant coffee granules, and vanilla extract to the butter mixture. Mix everything until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Gently fold in the semi-sweet chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes or until the edges are lightly golden, but the centers remain soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To store the cookies, place them in an airtight container at room temperature. They will stay fresh for up to a week.

For longer storage, you can freeze the cookies for up to three months. Reheat by microwaving for 10-15 seconds.

For a twist, you can add nuts like walnuts or pecans, or use white chocolate chips instead of semi-sweet chocolate chips.

For a milder coffee flavor, use decaf instant coffee granules.

Make sure not to overbake the cookies for a soft, chewy texture.
