Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
2 teaspoons instant coffee granules
1/2 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
- In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is smooth and creamy.
- Add the egg, instant coffee granules, and vanilla extract to the butter mixture. Mix everything until well combined.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Gently fold in the semi-sweet chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are lightly golden, but the centers remain soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To store the cookies, place them in an airtight container at room temperature. They will stay fresh for up to a week.
For longer storage, you can freeze the cookies for up to three months. Reheat by microwaving for 10-15 seconds.
For a twist, you can add nuts like walnuts or pecans, or use white chocolate chips instead of semi-sweet chocolate chips.
For a milder coffee flavor, use decaf instant coffee granules.
