Ingredients
- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/4 cup peanut butter (or almond butter)
- 1/4 cup maple syrup (or honey)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (optional)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed bananas, peanut butter, maple syrup, cinnamon, and vanilla extract until smooth.
- Stir in rolled oats until well incorporated. Fold in chocolate chips and nuts, if using.
- Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them 1 inch apart. Flatten slightly.
- Bake for 12-15 minutes or until golden around the edges.
- Cool cookies on the baking sheet for 5 minutes before transferring them to a wire rack.
