Description

Chewy Banana Oatmeal Cookies are soft, naturally sweetened treats made with ripe bananas, rolled oats, and pantry staples. These guilt-free cookies are perfect for a quick snack or a healthy dessert, with optional add-ins like chocolate chips and nuts for extra indulgence.

Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/4 cup peanut butter (or almond butter)
  • 1/4 cup maple syrup (or honey)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine mashed bananas, peanut butter, maple syrup, cinnamon, and vanilla extract until smooth.
  • Stir in rolled oats until well incorporated. Fold in chocolate chips and nuts, if using.
  • Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them 1 inch apart. Flatten slightly.
  • Bake for 12-15 minutes or until golden around the edges.
  • Cool cookies on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes
