Description

Satisfy your sweet tooth with these easy-to-make Cherry Pie Bites! Featuring a flaky, buttery crust and a luscious cherry filling, these bite-sized desserts are perfect for parties, holidays, or any special occasion.

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced

For the filling:

  • 1 cup canned cherry pie filling
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Additional:

  • 1 egg, beaten

Instructions

  • Make the crust:
In a large bowl, combine flour, sugar, and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Add cold water gradually, one tablespoon at a time, until the dough forms.
  • Roll and cut:
Roll out the dough on a floured surface to 1/4-inch thickness. Use a 2-inch cookie cutter to cut out circles.
  • Fill and top:
Place half of the dough circles on a parchment-lined baking sheet. Add 1 teaspoon of cherry pie filling in the center of each.
  • Seal the edges:
Top with the remaining circles, crimp edges with a fork to seal.
  • Brush with egg wash:
Brush the tops lightly with the beaten egg.
  • Bake:
Preheat oven to 375°F (190°C) and bake for 15-20 minutes, until golden brown.
  • Cool:
Allow to cool slightly before transferring to a wire rack.

Notes

  • For added sweetness, sprinkle sugar over the pie bites before baking.
  • Make sure the filling is not too runny to avoid leaks during baking.
