Ingredients
For the crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
For the filling:
- 1 cup canned cherry pie filling
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Additional:
- 1 egg, beaten
Instructions
- Make the crust:
In a large bowl, combine flour, sugar, and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Add cold water gradually, one tablespoon at a time, until the dough forms. - Roll and cut:
Roll out the dough on a floured surface to 1/4-inch thickness. Use a 2-inch cookie cutter to cut out circles. - Fill and top:
Place half of the dough circles on a parchment-lined baking sheet. Add 1 teaspoon of cherry pie filling in the center of each. - Seal the edges:
Top with the remaining circles, crimp edges with a fork to seal. - Brush with egg wash:
Brush the tops lightly with the beaten egg. - Bake:
Preheat oven to 375°F (190°C) and bake for 15-20 minutes, until golden brown. - Cool:
Allow to cool slightly before transferring to a wire rack.
Notes
- For added sweetness, sprinkle sugar over the pie bites before baking.
