Description

Cheesy thumbprint appetizers with hot pepper jelly are a perfect blend of buttery, cheesy richness and a touch of spicy-sweet heat. These bite-sized treats are easy to make, customizable, and ideal for entertaining.

 


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup chopped walnuts (optional)
  • Hot pepper jelly

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine butter, flour, salt, cheddar cheese, Parmesan cheese, and walnuts (if using).
  • Mix until the mixture resembles coarse crumbs.
  • Gradually add 2-3 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together.
  • Roll the dough into 1-inch balls and place them on ungreased baking sheets.
  • Bake for 12-15 minutes or until lightly golden brown.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack.
  • Use your thumb to create an indentation in the center of each cookie, then fill with hot pepper jelly.

Notes

  • For extra spice, choose a hotter jelly or add cayenne to the dough.
  • Refrigerate dough balls for 10-15 minutes before baking to reduce spreading.
