Description

Ingredients

  • 1 box of Rice-A-Roni Spanish rice
  • 1 lb lean ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can of Rotel (diced tomatoes with green chilies)
  • Shredded sharp cheddar cheese (for topping)
  • Salt, to taste
  • Pepper, to taste
  • Cumin, to taste

Instructions

  1. Prepare the Rice-A-Roni Spanish rice according to the package instructions. Set aside once ready.
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  3. Add chopped onions, red bell pepper, and green bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables soften.
  4. Stir in the Rotel (with juices), cumin, salt, and pepper to taste. Mix until well combined.
  5. Add the prepared Rice-A-Roni to the skillet and mix everything until evenly distributed.
  6. Transfer the mixture to a baking dish and spread it out evenly.
  7. Top with a generous amount of shredded sharp cheddar cheese.
  8. Bake in a preheated oven at 350°F for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.
