Ingredients

  • Waffles:
    • 8 large omega-3 eggs, beaten
    • 1 cup frozen spinach, thawed and finely chopped
    • 1 cup grated old cheddar cheese
    • 1/2 teaspoon cumin
    • Salt and pepper to taste (omit for babies)
  • Avocado Sauce:
    • 1 ripe avocado
    • 2 tablespoons whole milk Greek yogurt
    • Juice of 2 limes
    • Salt and pepper to taste (omit for babies)

Instructions

  • Prepare Spinach: Squeeze the thawed spinach in a fine sieve to remove excess moisture, then finely chop.
  • Mix Ingredients: In a bowl, combine eggs, spinach, cheese, and cumin. Season with salt and pepper if desired.
  • Cook Waffles: Preheat waffle iron to medium-high. Lightly grease it and pour 1/4 of the mixture into the center. Cook until golden brown and fluffy. Repeat with remaining batter.
  • Prepare Avocado Sauce: Puree avocado with Greek yogurt and lime juice until smooth.
