Ingredients
- 4 russet potatoes, peeled and sliced into ¼-inch slices (about 2 pounds)
- 1 yellow onion, sliced into rings
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- ½ teaspoon kosher salt
- 2 cups whole milk, room temperature
- 1½ cups mild cheddar cheese, shredded
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat to 400°F (200°C). Lightly grease an 8×8-inch casserole dish with nonstick spray.
- Layer Ingredients: Arrange potato slices and onion rings in alternating layers in the dish.
- Make Cheese Sauce:
- Melt butter in a medium saucepan over medium heat.
- Whisk in flour and salt, stirring constantly for 1 minute.
- Gradually add milk, whisking until thickened.
- Stir in cheese until melted and smooth.
- Combine and Bake: Pour cheese sauce evenly over the potatoes and onions. Cover with foil and bake for 85–90 minutes, or until potatoes are tender.
- Optional Broil: Remove foil and broil for a few minutes for a golden top.
- Season and Serve: Sprinkle with additional salt and pepper if desired. Serve hot.
