Description

Ingredients

  • 4 russet potatoes, peeled and sliced into ¼-inch slices (about 2 pounds)
  • 1 yellow onion, sliced into rings
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • ½ teaspoon kosher salt
  • 2 cups whole milk, room temperature
  • 1½ cups mild cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Preheat Oven: Preheat to 400°F (200°C). Lightly grease an 8×8-inch casserole dish with nonstick spray.
  • Layer Ingredients: Arrange potato slices and onion rings in alternating layers in the dish.
  • Make Cheese Sauce:
    • Melt butter in a medium saucepan over medium heat.
    • Whisk in flour and salt, stirring constantly for 1 minute.
    • Gradually add milk, whisking until thickened.
    • Stir in cheese until melted and smooth.
  • Combine and Bake: Pour cheese sauce evenly over the potatoes and onions. Cover with foil and bake for 85–90 minutes, or until potatoes are tender.
  • Optional Broil: Remove foil and broil for a few minutes for a golden top.
  • Season and Serve: Sprinkle with additional salt and pepper if desired. Serve hot.

Notes

  • For a heartier dish, add cubed ham or layer with additional cheeses.
  • Yukon Gold potatoes can be substituted for a creamier texture.
