Description

These Cheesy Pepperoni Pizza Roll-Ups with Low-Carb Tortillas are a delicious and guilt-free way to satisfy pizza cravings. Perfect for low-carb and keto diets, these easy-to-make roll-ups combine mozzarella, pepperoni, and pizza sauce wrapped in a low-carb tortilla. Quick to prepare and bake, they are a great option for a light meal, party appetizers, or a fun snack.


Ingredients

  • 4 low-carb tortillas
  • 1 cup shredded mozzarella cheese
  • 16 pepperoni slices
  • 1/2 cup pizza sauce
  • 1/2 tsp Italian seasoning
  • Olive oil spray (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Lay tortillas flat and spread about 2 tablespoons of pizza sauce on each.
  • Sprinkle each tortilla with 1/4 cup of mozzarella cheese.
  • Arrange 4 pepperoni slices on top of the cheese, and sprinkle with Italian seasoning.
  • Roll up each tortilla tightly, placing them seam-side down on the baking sheet.
  • Lightly spray the tops with olive oil for a crispier texture (optional).
  • Bake for 10-12 minutes or until the cheese is melted and bubbly.
  • Allow to cool slightly before slicing each roll-up into 3-4 pieces.

Notes

  • Storage/Reheating: Store leftovers in an airtight container for up to 3 days. To reheat, bake at 350°F (175°C) for 5 minutes or use an air fryer at 375°F (190°C).
