Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent.
  • Brown the Beef: Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  • Add Potatoes & Broth: Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  • Incorporate Dairy: Add milk and heavy cream, stirring well. Heat through without boiling.
  • Melt the Cheese: Gradually stir in shredded cheddar cheese until fully melted and smooth.
  • Season & Serve: Taste and season with salt and pepper. Garnish with green onions, or extra cheese.
