Ingredients
- 1 lb ground beef
 - 1 small onion, diced
 - 3 cloves garlic, minced
 - 4 cups potatoes, peeled and diced
 - 4 cups chicken broth
 - 2 cups shredded cheddar cheese
 - 1 cup milk
 - 1 cup heavy cream
 - 1 tbsp olive oil
 - Salt and pepper to taste

Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent.
 - Brown the Beef: Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
 - Add Potatoes & Broth: Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
 - Incorporate Dairy: Add milk and heavy cream, stirring well. Heat through without boiling.
 - Melt the Cheese: Gradually stir in shredded cheddar cheese until fully melted and smooth.
 - Season & Serve: Taste and season with salt and pepper. Garnish with green onions, or extra cheese.

Notes
- Use Russet potatoes for a creamier texture or Yukon Gold for a buttery flavor.
 - Try Monterey Jack or Gouda for a different cheese twist.
 - Add spices like smoked paprika or cayenne for extra depth.
 - If the soup thickens too much when reheating, stir in a bit of milk or broth.
