Description

Ingredients

  • 1 lb ground chicken
  • 1/2 cup buffalo sauce (more for extra spice)
  • 1/2 cup ranch dressing
  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, cooking until softened, about 2-3 minutes.
  • Add the ground chicken to the skillet and cook until browned, breaking it up as it cooks. Stir in buffalo sauce, salt, and pepper. Simmer on low for 5 minutes and remove from heat.
  • Cook the lasagna noodles according to package instructions, drain, and set aside.
  • In a separate bowl, combine ricotta, mozzarella, cheddar, and Parmesan cheeses.
  • To assemble, spread a thin layer of buffalo chicken mixture on the bottom of a baking dish. Add a layer of lasagna noodles, followed by a layer of cheese mixture. Repeat the layers, finishing with a cheese layer on top.
  • Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let the lasagna cool for 5-10 minutes before serving. Drizzle with ranch dressing and garnish with parsley if desired.
