Ingredients

For the Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt

For the Cinnamon-Sugar Coating:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make Cheesecake Filling: In a bowl, combine cream cheese, powdered sugar, and vanilla until smooth. Refrigerate to firm up.
  3. Prepare Cookie Dough: In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract, mixing until combined.
  4. Combine Dry Ingredients: In another bowl, whisk flour, baking soda, cream of tartar, and salt. Gradually mix into the wet ingredients to form a dough.
  5. Assemble Cookies: Scoop 1 tablespoon of dough, flatten it, and place 1 teaspoon of cheesecake filling in the center. Cover with another piece of dough, seal edges, and roll into a ball.
  6. Cinnamon-Sugar Coating: Mix granulated sugar and cinnamon in a small bowl. Roll each cookie ball in the mixture to coat.
  7. Bake: Place cookies on the prepared baking sheet and bake for 10-12 minutes or until edges are set and tops are slightly cracked.
  8. Cool: Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack.
