Ingredients

  • 12 oz cooked, diced chicken
  • 1 lb lean ground beef
  • 2 tsp hamburger seasoning (or salt and pepper)
  • 1 tbsp minced garlic
  • 1 (10.5 oz) can cheddar cheese soup (low sodium if preferred)
  • 2 cups beef broth (low or no sodium)
  • 5 cups frozen O’Brien diced potatoes (with onions and peppers)
  • 8 oz medium cheddar cheese, shredded (about 2 cups)
  • ½ cup heavy cream
  • Optional toppings: Chopped green onions, extra shredded cheddar cheese

Instructions

  • Cook the Chicken: In a large stockpot over medium-high heat, cook diced chicken until golden brown (8-10 minutes). Transfer to a paper towel-lined plate.
  • Brown the Beef: In the same pot, cook the ground beef with hamburger seasoning, crumbling until browned (5-7 minutes). Drain excess grease.
  • Add Garlic: Stir in minced garlic and sauté for 1 minute.
  • Combine Base Ingredients: Add cheddar cheese soup, beef broth, and frozen potatoes. Stir and bring to a boil. Cook for 7-10 minutes until potatoes are heated through.
  • Add Chicken: Mix in half of the cooked chicken, reserving the rest for topping.
  • Melt in Cheese: Gradually add shredded cheddar cheese, stirring until melted.
  • Add Cream: Stir in heavy cream and let simmer for 1-2 minutes (avoid boiling).
  • Serve: Remove from heat and serve hot, garnished with extra cheese and green onions.
