Ingredients

  • 1 pound ground beef (80% lean or leaner)
  • 1/2 cup chopped white onion
  • 2 teaspoons minced garlic
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon yellow mustard
  • 2 teaspoons ketchup
  • 1 1/2 cups Grillo’s Pickles® Dill Chips, drained and chopped
  • 2 cups shredded cheddar cheese
  • 24 eggroll wrappers
  • 1 cup vegetable oil (for frying)
  • Spicy ranch dressing (optional, for dipping)

Instructions

Prepare the Filling:

  1. Heat a nonstick skillet over medium heat.
  2. Cook ground beef, onion, garlic, and onion powder for 8-10 minutes, breaking beef into crumbles.
  3. Drain and transfer to a bowl. Stir in salt, pepper, mustard, ketchup, pickles, and cheese.

2. Assemble the Eggrolls:

  1. Place an eggroll wrapper on a surface with a corner facing you.
  2. Add 2 tablespoons of filling to the center.
  3. Fold sides inward, moisten bottom corner with water, roll tightly, and seal.
  4. Repeat for all wrappers.

3. Fry the Eggrolls:

  1. Heat oil to 375°F (190°C).
  2. Fry eggrolls in batches for 4-5 minutes until golden and cooked through.
  3. Drain on paper towels.

4. Serve:

  • Slice in half and pair with spicy ranch dressing or your favorite dip.

  • Cheese Variations: Try pepper jack or mozzarella for a twist.
  • Add-ons: Include bacon, jalapeños, or mushrooms for enhanced flavor.
