Description

Ingredients

  • Vegetables: Yukon Gold potatoes, sweet potatoes, onion.
  • Dairy: Cheese (Gruyère or cheddar), milk or half-and-half.
  • Herbs & Spices: Fresh parsley, rosemary, thyme, garlic powder, salt, pepper.
  • Liquids: Vegetable broth.

Instructions

  • Preheat Oven: Set oven to 400°F (200°C).
  • Prepare Ingredients: Thinly slice Yukon Gold and sweet potatoes. Chop herbs and onion.
  • Combine Mixture: In a bowl, toss potato slices with onion, herbs, garlic powder, salt, pepper, and most of the cheese.
  • Assemble in Skillet: Arrange potato slices vertically in a greased oven-safe skillet or baking dish.
  • Add Liquids: Pour vegetable broth and milk over the arranged potatoes.
  • Bake: Cover with foil and bake for 50 minutes. Remove foil, top with remaining cheese, and bake for 15-20 minutes more until tender and golden brown.
