Description
Cavacas are traditional Portuguese popover-style pastries with a light, airy texture and a soft, custard-like center. Topped with a lemon glaze, they are perfect for brunch or an elegant snack with coffee or tea.
Ingredients
1 cup all-purpose flour
1/4 teaspoon salt
3 large eggs
1 cup milk
2 tablespoons unsalted butter, melted
1 cup powdered sugar
2–3 tablespoons milk
1 teaspoon lemon juice
Instructions
- Preheat the oven to 450°F (230°C) and generously grease a 12-cup muffin or popover pan.
- In a bowl, whisk together the flour and salt.
- In another bowl, beat the eggs until frothy, then mix in the milk and melted butter.
- Slowly pour the wet mixture into the dry ingredients, whisking until smooth and runny.
- Fill each muffin cup halfway with the batter.
- Bake at 450°F for 15 minutes, then reduce the heat to 350°F (175°C) and bake for another 15–20 minutes until puffed and golden brown.
- While the Cavacas bake, whisk together powdered sugar, milk, and lemon juice until smooth to make the glaze.
- Remove the Cavacas from the oven and let cool slightly before drizzling with glaze.
- Serve warm for best flavor and texture.
Notes
Add a splash of vanilla extract to the batter for extra flavor.
Substitute lemon juice in the glaze with orange or lime juice for a citrus twist.
Dip cooled Cavacas in melted chocolate for a richer finish.
Store in an airtight container at room temperature for up to 2 days or refrigerate for longer storage.
Reheat in a 300°F oven for 5–7 minutes and add fresh glaze before serving.
