Description

Cavacas are traditional Portuguese popover-style pastries with a light, airy texture and a soft, custard-like center. Topped with a lemon glaze, they are perfect for brunch or an elegant snack with coffee or tea.


Ingredients

1 cup all-purpose flour

1/4 teaspoon salt

3 large eggs

1 cup milk

2 tablespoons unsalted butter, melted

1 cup powdered sugar

23 tablespoons milk

1 teaspoon lemon juice


Instructions

  1. Preheat the oven to 450°F (230°C) and generously grease a 12-cup muffin or popover pan.
  2. In a bowl, whisk together the flour and salt.
  3. In another bowl, beat the eggs until frothy, then mix in the milk and melted butter.
  4. Slowly pour the wet mixture into the dry ingredients, whisking until smooth and runny.
  5. Fill each muffin cup halfway with the batter.
  6. Bake at 450°F for 15 minutes, then reduce the heat to 350°F (175°C) and bake for another 15–20 minutes until puffed and golden brown.
  7. While the Cavacas bake, whisk together powdered sugar, milk, and lemon juice until smooth to make the glaze.
  8. Remove the Cavacas from the oven and let cool slightly before drizzling with glaze.
  9. Serve warm for best flavor and texture.

Notes

Add a splash of vanilla extract to the batter for extra flavor.

Substitute lemon juice in the glaze with orange or lime juice for a citrus twist.

Dip cooled Cavacas in melted chocolate for a richer finish.

Store in an airtight container at room temperature for up to 2 days or refrigerate for longer storage.

Reheat in a 300°F oven for 5–7 minutes and add fresh glaze before serving.
