Description

Cauliflower rice with crispy chicken wings is a healthy, low-carb meal that’s both satisfying and delicious. The crispy wings and fluffy cauliflower rice make a mouth-watering combination, perfect for low-carb and keto diets.


Ingredients

1 head of cauliflower, grated or processed into rice-sized pieces

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional)

8 chicken wings

1 tablespoon olive oil (for the wings)

1 tablespoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the chicken wings with 1 tablespoon olive oil and coat them evenly with the spice mixture.
  4. Place the seasoned wings on a baking sheet lined with parchment paper or foil. Bake for 25-30 minutes, flipping halfway through, until the wings are crispy and golden brown.
  5. While the chicken wings bake, heat 1 tablespoon olive oil in a large skillet over medium heat.
  6. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the grated cauliflower to the skillet, and cook, stirring occasionally, for 5-7 minutes until the cauliflower is tender but still slightly crisp. Season with salt and pepper to taste.
  8. Once the cauliflower rice is cooked, remove it from heat and stir in the fresh parsley if using.
  9. Serve the crispy chicken wings on a plate alongside the cauliflower rice.

Notes

Spicy Wings: Add a pinch of cayenne pepper or chili powder to the spice mixture for an extra kick.

Cauliflower Rice with Veggies: Stir in sautéed vegetables like bell peppers or spinach for added nutrition.
