Description

Ingredients
1 head of cauliflower, grated or processed into rice-sized pieces
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)
8 chicken wings
1 tablespoon olive oil (for the wings)
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder

Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.
- Rub the chicken wings with 1 tablespoon olive oil and coat them evenly with the spice mixture.
- Place the seasoned wings on a baking sheet lined with parchment paper or foil. Bake for 25-30 minutes, flipping halfway through, until the wings are crispy and golden brown.
- While the chicken wings bake, heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the grated cauliflower to the skillet, and cook, stirring occasionally, for 5-7 minutes until the cauliflower is tender but still slightly crisp. Season with salt and pepper to taste.
- Once the cauliflower rice is cooked, remove it from heat and stir in the fresh parsley if using.
- Serve the crispy chicken wings on a plate alongside the cauliflower rice.
Notes
Spicy Wings: Add a pinch of cayenne pepper or chili powder to the spice mixture for an extra kick.
Cauliflower Rice with Veggies: Stir in sautéed vegetables like bell peppers or spinach for added nutrition.
