Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup grated carrots (about 1 medium carrot)
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, and beat until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the grated carrots, walnuts, and raisins (if using).
  7. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown and a toothpick inserted comes out clean.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Store the cookies in an airtight container for up to 4-5 days.
  • Freeze the dough by rolling it into balls and storing them in a freezer-safe bag. Bake from frozen with an additional 1-2 minutes of baking time.
