Quick, easy, and festive Christmas cookies made with cake mix! These colorful and soft treats are perfect for holiday gatherings or gifting, with just the right mix of sweetness and cheer.
Ingredients
1 box white or vanilla cake mix
2 large eggs
⅓ cup vegetable oil
1 teaspoon vanilla extract
Red and green sprinkles or colored sugar
Optional: ½ cup white chocolate chips or festive M&M’s
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or grease lightly.
- Make Dough: In a large bowl, combine the cake mix, eggs, oil, and vanilla extract until a soft dough forms.
- Add Mix-Ins: Gently fold in half of the sprinkles, along with white chocolate chips or M&M’s, if using.
- Shape Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and place them 2 inches apart on the prepared baking sheet.
- Decorate: Flatten each dough ball slightly and top with additional sprinkles.
- Bake: Bake for 9–11 minutes, or until the edges are set but the centers are soft.
- Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve: Once cooled, enjoy or package as festive holiday gifts!
Notes
For a richer flavor, try adding a splash of almond extract.
These cookies can be customized with different sprinkle colors for other holidays.
