Ingredients

For the Deviled Eggs:

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Cajun seasoning

  • Salt and pepper, to taste

For the Shrimp Topping:

  • 1/2 pound small shrimp, peeled and deveined
  • 1 tablespoon olive oil

  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  • Boil the Eggs:
    Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let the eggs sit for 10-12 minutes. Transfer the eggs to a bowl of ice water to cool completely. Peel the eggs and slice them in half lengthwise.
  • Prepare the Deviled Egg Filling:
    Remove the yolks from the egg halves and place them in a bowl. Mash the yolks with a fork, then mix in the mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, salt, and pepper. Stir until smooth and creamy.
  • Cook the Shrimp:
    In a small skillet, heat the olive oil over medium heat. Add the shrimp, Cajun seasoning, and garlic powder. Cook the shrimp for 2-3 minutes per side until they are pink and cooked through. Remove from heat and set aside to cool slightly.
  • Assemble the Deviled Eggs:
    Spoon or pipe the deviled egg filling back into the egg white halves.
  • Top with Shrimp:
    Place one cooked shrimp on top of each deviled egg. Garnish with chopped fresh parsley and an extra sprinkle of Cajun seasoning for color and flavor.
