Featuring creamy, cheesy layers of tender elbow macaroni, this dish is a family favorite perfect for weeknight dinners or special occasions. Customize it with your favorite cheeses or toppings for a rich, satisfying meal that everyone will love.

Ingredients

  • 1 lb dry elbow macaroni
  • 4 tbsp salted butter
  • 1 can (12 oz) evaporated milk
  • 1 cup milk of choice (whole, 2%, or almond milk)
  • 2 large eggs
  • 1 tsp garlic salt
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp paprika (optional)

Instructions

  • Cook the Pasta: Boil elbow macaroni in salted water until al dente (about 8 minutes). Drain and return to the pot.
  • Butter the Pasta: Stir the butter into the hot macaroni until fully melted and evenly coated.
  • Prepare the Milk Mixture: In a separate bowl, whisk together evaporated milk, milk, eggs, and garlic salt until smooth.
  • Layer the Mac and Cheese: In a greased baking dish, layer one-third of the macaroni, followed by one-third of the shredded cheddar and mozzarella cheese. Repeat the layers until all ingredients are used.
  • Add the Milk Mixture: Pour the milk mixture evenly over the layered macaroni and cheese.
  • Top and Bake: Sprinkle paprika over the top layer of cheese, if desired. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the top is golden and bubbling.
  • Serve: Let cool slightly before serving to allow the layers to set. Enjoy!

Notes

  • Freshly shred your cheese for the creamiest results.
  • To avoid grainy sauce, stir the cheese into the milk mixture gradually over low heat if making stovetop mac and cheese.
  • Adjust the paprika for a smoky touch or leave it out for a milder flavor.
