- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 cup finely chopped pecans
- 1 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- In a stand mixer, cream together butter and powdered sugar until smooth.
- Reduce mixer speed to low and add salt, vanilla extract, flour, and chopped pecans. Mix until combined.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets.
- Bake for 11 minutes or until the bottoms are lightly golden.
- While still warm, coat cookies in powdered sugar and transfer to cooling racks.
- Once completely cool, roll the cookies in powdered sugar again for a festive finish.
Notes
- For best results, use finely chopped pecans to ensure the dough holds together.
- Ensure the cookies are fully cool before the second powdered sugar coating to avoid clumping.
- Chilling the dough can help prevent spreading.
