Ingredients
- 2 kilos of chicken wings
- 4 tablespoons baking powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon pepper
- 5 tablespoons peri peri sauce
- 5 tablespoons dark soy sauce
- 5 tablespoons light brown sugar
- 5 tablespoons runny honey
- 5 tablespoons melted butter
- 1 tablespoon toasted sesame oil
- 4 garlic cloves, finely sliced
- 1 sliced lemon
- Handful of fresh parsley
- Handful of pomegranate seeds
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the baking powder, smoked paprika, salt, and pepper. Coat the chicken wings thoroughly with the spice mix.
- Spray a wire rack with cooking oil and place it over a foil-lined tray. Arrange the chicken wings on the rack and bake for 1 hour, rotating halfway through.
- While the wings bake, prepare the marinade by combining peri peri sauce, dark soy sauce, brown sugar, honey, melted butter, toasted sesame oil, and garlic cloves in a bowl. Stir well and set aside.
- Once the wings are crispy and golden, remove them from the oven. Transfer the wings to a large ovenproof dish. Baste them with the prepared marinade and return them to the oven for 10 minutes. Repeat this basting and baking process two more times.
- After the final bake, remove the wings from the oven and garnish them with fresh parsley, lemon slices, and pomegranate seeds. Serve with couscous salad.
Notes
- To make the wings spicier, increase the amount of peri peri sauce or add chili flakes.
- If you prefer a smoky flavor, grill the wings instead of baking them.
- Store leftover wings in an airtight container in the fridge for up to 3 days. Reheat them in the oven at 180°C (350°F) for 10 minutes to restore their crispiness.
- For a different flavor, you can swap the honey with agave syrup or maple syrup.
