Ingredients
- 3–4 ripe tomatoes, diced
- ½ teaspoon salt
- 2 cloves garlic, minced
- ⅓ cup fresh basil leaves, chopped
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon red wine vinegar or balsamic vinegar
- 2 tablespoons olive oil
- 1 baguette, sliced diagonally into ½-inch slices
- Extra virgin olive oil, for brushing
- ½ cup balsamic vinegar
- 3 tablespoons brown sugar
- Parmesan cheese (optional)
Instructions
- Prepare the Tomato Topping
- Combine diced tomatoes with salt; let sit for 20-30 minutes, then drain.
- Add garlic, basil, pepper, vinegar, and olive oil. Stir gently and let rest for another 20-30 minutes.
- Prepare the Bread
- Preheat oven to 400°F (200°C).
- Brush baguette slices with olive oil, place on a baking sheet, and bake for 5 minutes. Flip and bake for another 2-3 minutes until golden.
- Make the Balsamic Glaze
- Combine balsamic vinegar and brown sugar in a saucepan.
- Simmer for 10 minutes, stirring occasionally, until thickened. Let cool.
- Assemble the Bruschetta
- Spoon the tomato mixture onto each toasted slice.
- Drizzle with balsamic glaze and garnish with Parmesan, if desired.
