Ingredients

  • 34 ripe tomatoes, diced
  • ½ teaspoon salt
  • 2 cloves garlic, minced
  • ⅓ cup fresh basil leaves, chopped
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon red wine vinegar or balsamic vinegar
  • 2 tablespoons olive oil
  • 1 baguette, sliced diagonally into ½-inch slices
  • Extra virgin olive oil, for brushing
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar
  • Parmesan cheese (optional)

Instructions

  • Prepare the Tomato Topping
    • Combine diced tomatoes with salt; let sit for 20-30 minutes, then drain.
    • Add garlic, basil, pepper, vinegar, and olive oil. Stir gently and let rest for another 20-30 minutes.
  • Prepare the Bread
    • Preheat oven to 400°F (200°C).
    • Brush baguette slices with olive oil, place on a baking sheet, and bake for 5 minutes. Flip and bake for another 2-3 minutes until golden.
  • Make the Balsamic Glaze
    • Combine balsamic vinegar and brown sugar in a saucepan.
    • Simmer for 10 minutes, stirring occasionally, until thickened. Let cool.
  • Assemble the Bruschetta
    • Spoon the tomato mixture onto each toasted slice.
    • Drizzle with balsamic glaze and garnish with Parmesan, if desired.
