Ingredients
- 1 cup tapioca flour
- ½ cup milk (room temperature)
- ¼ cup vegetable oil
- 1 large egg (room temperature)
- ½ teaspoon salt
- ½ cup mozzarella cheese, shredded
- ½ cup cheddar cheese, shredded
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Batter: In a blender or food processor, combine tapioca flour, milk, oil, salt, and egg. Blend until smooth.
- Add Cheese: Add shredded mozzarella and cheddar cheese to the batter, pulsing a few times to combine.
- Fill Muffin Pan: Grease a mini muffin pan and pour the batter into each cup, filling halfway.
- Bake: Bake for 15–20 minutes or until the breads are golden brown and have a crispy crust.
- Serve: Cool slightly before removing from the pan. Serve warm and enjoy!
