Ingredients
- Cookies:
- 1 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ¾ cup milk
- Filling:
- 1 cup heavy cream
- ½ cup powdered sugar
- ½ tsp vanilla extract
- Ganache:
- 1 ½ cups dark chocolate chips, melted
- ¼ cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Combine flour, baking powder, and salt in a bowl. Set aside.
- Cream butter and sugar until light and fluffy. Mix in the egg and vanilla.
- Gradually add the dry ingredients to the wet, alternating with milk, to form a smooth dough.
- Drop small portions of dough onto the baking sheet, flattening slightly.
- Bake for 10–12 minutes or until edges are golden. Cool completely.
- Whip heavy cream, powdered sugar, and vanilla to stiff peaks. Pipe onto half the cookies and top with the remaining cookies.
- Heat ¼ cup heavy cream until boiling. Remove from heat and mix in melted chocolate chips to form ganache.
- Dip the top of each cookie sandwich into ganache. Let set before serving.

- Ensure the butter is softened, not melted, to prevent excessive spreading.
- Chill dough briefly if cookies spread too much during baking.
