Ingredients
1/2 cup rolled oats
1/2 cup unsweetened almond milk (or any milk of choice)
1/2 cup plain Greek yogurt
1/4 cup fresh or frozen blueberries
1 tablespoon chia seeds
1 tablespoon honey or maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract
Pinch of salt
Optional toppings: extra blueberries, granola, or a drizzle of almond butter
Instructions
- In a mason jar or airtight container, combine the rolled oats, almond milk, Greek yogurt, chia seeds, honey, cinnamon, vanilla extract, and a pinch of salt.
- Stir well until all ingredients are thoroughly combined.
- Gently fold in the blueberries.
- Cover the jar or container and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and for the flavors to meld.
- In the morning, give the oats a good stir. Top with additional blueberries, granola, or almond butter if desired, and enjoy!
Notes
Can be stored in the fridge for up to 3 days.
Use any milk of choice, such as cow’s milk, oat milk, or coconut milk.
Frozen blueberries work well and make the oats creamier as they thaw.
For a vegan version, use dairy-free yogurt and maple syrup instead of honey.
For added crunch, add granola or chopped nuts on top.
