Description

These Blueberry Pie Overnight Oats are a delicious and nutritious breakfast that combines the flavors of blueberry pie with the heartiness of oats. Perfect for meal prep and can be customized with various toppings and flavors.


Ingredients

1/2 cup rolled oats

1/2 cup unsweetened almond milk (or any milk of choice)

1/2 cup plain Greek yogurt

1/4 cup fresh or frozen blueberries

1 tablespoon chia seeds

1 tablespoon honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

Pinch of salt

Optional toppings: extra blueberries, granola, or a drizzle of almond butter


Instructions

  1. In a mason jar or airtight container, combine the rolled oats, almond milk, Greek yogurt, chia seeds, honey, cinnamon, vanilla extract, and a pinch of salt.
  2. Stir well until all ingredients are thoroughly combined.
  3. Gently fold in the blueberries.
  4. Cover the jar or container and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and for the flavors to meld.
  5. In the morning, give the oats a good stir. Top with additional blueberries, granola, or almond butter if desired, and enjoy!

Notes

Can be stored in the fridge for up to 3 days.

Use any milk of choice, such as cow’s milk, oat milk, or coconut milk.

Frozen blueberries work well and make the oats creamier as they thaw.

For a vegan version, use dairy-free yogurt and maple syrup instead of honey.

For added crunch, add granola or chopped nuts on top.
