Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • 2 tbsp granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the Blueberry Ice Cream Layer:

  • 2 pints blueberry ice cream, slightly softened
  • 1 cup fresh blueberries

For the Topping:

  • 1 cup fresh blueberries
  • ½ cup blueberry jam or preserves
  • Whipped cream (optional)

Instructions

  • Prepare the Crust:
    • Mix graham cracker crumbs, melted butter, and granulated sugar in a medium bowl.
    • Press the mixture into the bottom of a 9-inch springform pan and refrigerate.
  • Make the Cheesecake Layer:
    • Beat cream cheese until creamy. Mix in powdered sugar and vanilla extract.
    • Whip heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  • Assemble the Ice Cream Layer:
    • Spread half the cheesecake mixture over the crust. Freeze for 20 minutes.
    • Spread softened blueberry ice cream over the set cheesecake layer, adding fresh blueberries. Freeze for 1-2 hours.
  • Add the Final Cheesecake Layer:
    • Spread the remaining cheesecake mixture over the ice cream layer. Freeze for 2-3 hours.
  • Prepare the Topping:
    • Heat blueberry jam and fresh blueberries over low heat for 2-3 minutes. Cool before using.
  • Serve:
    • Remove the cheesecake from the springform pan. Drizzle with blueberry topping and garnish with whipped cream if desired. Slice and serve.
