Description

Blueberry Cake Donuts are moist, fluffy, and baked to perfection, making them a healthier alternative to traditional fried donuts. Loaded with fresh blueberries and topped with a sweet vanilla glaze, these homemade donuts are easy to make and perfect for breakfast, brunch, or an afternoon snack.

Ingredients

For the Donuts:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 2 large eggs
  • ¾ cup buttermilk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the Oven – Set your oven to 350°F (175°C) and grease a donut pan.
  • Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • Combine Wet Ingredients – In another bowl, beat the eggs, then mix in buttermilk, melted butter, and vanilla extract.
  • Combine Mixtures – Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the blueberries.
  • Fill the Donut Pan – Spoon the batter into the donut pan, filling each cavity about ¾ full.
  • Bake the Donuts – Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
  • Prepare the Glaze – In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust consistency if needed.
  • Glaze the Donuts – Once the donuts are cool, dip the tops into the glaze and let them set on a wire rack.
  • Serve and Enjoy – These donuts are best enjoyed fresh but can also be stored for later.

Notes

  • Toss blueberries in a little flour to prevent them from sinking.
  • If using frozen blueberries, thaw and pat them dry before adding to the batter.
  • Adjust glaze thickness by adding more powdered sugar (thicker) or more milk (thinner).
