Description
Blueberry Cake Donuts are moist, fluffy, and baked to perfection, making them a healthier alternative to traditional fried donuts. Loaded with fresh blueberries and topped with a sweet vanilla glaze, these homemade donuts are easy to make and perfect for breakfast, brunch, or an afternoon snack.
Ingredients
For the Donuts:
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 2 large eggs
- ¾ cup buttermilk
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries (or frozen, thawed)
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the Oven – Set your oven to 350°F (175°C) and grease a donut pan.
- Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients – In another bowl, beat the eggs, then mix in buttermilk, melted butter, and vanilla extract.
- Combine Mixtures – Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the blueberries.
- Fill the Donut Pan – Spoon the batter into the donut pan, filling each cavity about ¾ full.
- Bake the Donuts – Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
- Prepare the Glaze – In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust consistency if needed.
- Glaze the Donuts – Once the donuts are cool, dip the tops into the glaze and let them set on a wire rack.
- Serve and Enjoy – These donuts are best enjoyed fresh but can also be stored for later.
Notes
- Toss blueberries in a little flour to prevent them from sinking.
- If using frozen blueberries, thaw and pat them dry before adding to the batter.
- Adjust glaze thickness by adding more powdered sugar (thicker) or more milk (thinner).
