Ingredients

Truffle Base:

  • 2 cups white chocolate chips
  • 2 tablespoons heavy cream
  • 2 tablespoons blue curaçao (or non-alcoholic blue curaçao syrup/blue raspberry syrup)

Coating:

  • 1/2 cup blue sanding sugar

Instructions

  • Prepare the Truffle Mixture
    • In a heatproof bowl, melt white chocolate chips and heavy cream together. Use a microwave in 30-second intervals, stirring between each, until smooth.
    • Stir in blue curaçao and mix until fully incorporated.
  • Chill the Mixture
    • Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until firm enough to scoop.
  • Shape the Truffles
    • Using a small scoop or spoon, portion out the mixture and roll into balls. Place on a parchment-lined baking sheet.
  • Coat the Truffles
    • Roll each truffle in blue sanding sugar, pressing gently for an even coating. Return to the baking sheet.
  • Set the Truffles
    • Refrigerate for another 30 minutes to firm up before serving.
